Quick Dinner: Ceviche

Our work schedules have been getting busier and busier since the New Year started. So we have been trying to plan quick and easy dinners. Ceviche is a great just for that, plus it makes great left overs for lunches too! There are so many ways to eat it too, everyone can do something different if they want. Tacos, dip, tostadas,or salad the possibilities are endless.

INGREDIENTS

1 lb raw shrimp, peeled and deveined
3 jalapeños, diced
1/2 white onion, diced
1 avocado, diced
1/4 cup cilantro, finely chopped
3 oranges, juiced
3 limes, juiced
Salt and pepper to taste

In a large pot, bring 5 cups of water to a boil. Add in shrimp, boil for 1 minute. You want the shrimp to be a little under cooked (the citrus will do the rest). Straining immediately and rinse with cold water. Chop the shrimp in large chunks and set aside.

Combine jalapeños, onion, and cilantro into a large glass bowl. Add in shrimp followed by the citrus juice. Stir everything together.

Refrigerate for 30 minutes, stirring occasionally. Add avocado and you’re ready to serve.

Once you’ve got the basic down, there are 100 ways to change up the recipe. You can add mango, pineapple, tomato, cucumber, hot sauce, black beans, just to name a few.
